Orange Muffins with Honey Butter

1 1/4 cups all-purpose white flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 cup softened butter
1/2 cup honey
1 egg
1/4 cup orange juice concentrate
1/2 tsp. grated orange zest

Combine all the dry ingredients in a bowl.
Cream the butter and honey with a whisk or electric mixer.
Gradually whisk in the egg, orange juice and zest; mix in the dry ingredients little by little.· Spoon into greased or paper-lined muffin tins. Bake in a 350° F oven for 25-30 minutes. Check for doneness with a skewer or the tip of a knife.

4 T. softened butter
2 T. honey
1/2 T. grated orange zest
